Fiery Mexican Beef Fajitas with Chilli Bean
Prep time: 20 mins
Cooking time: (based on a 2cm or 3/4inch steak)
Rare: 2 and a half mins each side
Medium: 4 mins each side
Well done: 6 mins each side
1lb lean rump or sirlon steak
1tbsp dried marjoram or oregano
2tsp smoked paprika
Salt and pepper
2tbsp olive oil
1 medium onion, finely chopped
2 garlic cloves, peeled and crushed
4 medium tomatoes roughly chopped
2tbsp tomato puree
410g can kidney beans, drained
¼ pint water
6-8 tortillas
To Garnish:
Shredded iceberg lettuce
Sliced avocado
Red onions
Coriander leaves
Soured cream
1. Place steaks in a shallow bowl and add the dried herb, smoked paprika and seasoning.
2. Rub the mixture into the steaks, cover and refrigerate until required.
3. Heat half the oil in a large frying pan and cook the onion and garlic for 2-3 mins until soft.
4. Add the tomatoes, puree, beans and water. Bring to the boil, reduce the heat and simmer uncovered for 10 mins or until the sauce thickens.
5. Cook the steaks on a prepared barbecue.
6. Slice and serve in a tortilla wrap with the garnishes.
