THE AA four-star Harbour Heights Hotel in Sandbanks, has appointed a new head chef. Clyde Hollett brings more than 15 years’ experience to a role which will see him heading a nine-strong team at the hotel’s two AA red rosette restaurant, Harbar Bistro, and taking charge of the kitchen set-up and menus.

He joins the restaurant from the Bournemouth Highcliff Marriott, where he played a vital role in the success of the hotel’s Highcliff Grill, achieving an AA red rosette in just eight weeks and another AA red rosette after further development of the menu. His career has also seen him cook at a number of high profile events including the 2011 Hotel and Catering Show dinner, where he worked alongside celebrity chef James Martin, the British Beach Polo Champ-ionships, Henley Regatta and the Stella Artois Tennis Championships. Commenting on his appointment, Clyde said: “I am really looking forward to working with the team at The Harbour Heights Hotel.

“The hotel’s restaurant, Harbar Bistro, has an excellent reputation which I’m honoured to be a part of.

“I look forward to working with the hotel team, continuing to provide exceptional culinary experience at Harbar Bistro.”

Harbour Heights general manager David Knight added: “Clyde is a talented and exciting chef and we’re pleased to welcome him to the hotel.

“Clyde will be a highly visible chef – not only in the kitchen but in the restaurant as well.”

The Harbour Heights hotel boasts breathtaking views with floor-to-ceiling glass windows that allow diners to enjoy the glorious scenery whatever the weather.

The south-facing teak-decked terrace is also a great spot to soak up the sun with a cocktail.
