A new waterside restaurant is to open this month.

As reported, Salt will open its doors in the old Boat That Rocks building at Portland Marina.

The Boat That Rocks closed in November last year citing rocketing bills as being behind its decision to close.

An exact date has not been given for Salt's opening yet but it will open in early July, a spokesman said.

Salt will be operated by Boatfolk Bars Ltd, which is involved in The Kitchen, a short distance away, and also overlooking the marina.

The new restaurant will offer a 'seasonal' menu and plans to become an 'all-day dining destination' and on weekends will feature a pop-up pizza truck.

Live music will be performed at the venue, with acoustic performances during the day and 'energetic' DJ sets by night.

The interior of Salt has been put together by 'eclectic designers' and will be in keeping with a nautical theme - a boat installation will hang in the centre of the space; there will be external wood burners and fire pits; 'distinctive' seating with distressed leather and wooden tables complete with an indoor pergola.

It will serve seasonal fish caught from Weymouth Bay, festival-inspired burgers, luxury hot dogs plus pizzas from the mobile woodfired pizza pop-up, the Pizza Cutter.

Signature burgers on offer will be a chicken katsu burger, a salt burger - a 'mouth-watering beef burger loaded with bacon, a choice of cheese, and savoury sauces' or a 'meat-free madness burger'.

On weekends, Salt will open the hatch of its pop-up pizza truck, the Pizza Cutter, serving al fresco wood-fired pizzas.

Guests can choose from classic margherita with fresh basil, sticky BBQ pulled beef, and oriental duck and spring onions.

Those behind Salt says Portland 'has earned its reputation as the ultimate "Après-Sea" destination' and the restaurant aims to 'recreate the magic of being at sea and infuse it into every aspect of its offering'.

As well as offering locally caught fish, the restaurant will also be serving beverages from local producers.

It has partnered with Dorset vineyard Furleigh Estates and local distillery Conker Spirits.
